Wainscot has been crafted from selected Pinot grapes harvested in only our finest vintages. since 2012. An exceptional example of wine made from the iconic Pinot Noir, this vintage medal winner captures the essence of this fabulous grape, delivering exceptional finesse, complexity and a unique style that never fails to please. Intriguing hints of tarte tatin tease on the nose, leading to subtle muted honey undertones underpinning sensations of ripe stone fruits, of bramley apple, peach and apricot, with a persistent length and smooth finish.

Ripe Pinot Noir delivers an intense spicy, peppery, red berry flavour at harvest and in this wine Pinot Noir 100% translates this truly beautifully and distinctive grape into a truly delicious sparkling wine. Traditional whole bunch press, followed in tank by our non-interventionist wine making philosophy, creates something simple but truly special. A rich golden glow in the glass, barely masks a persistent stream of tiny bubbles with evident exceptional length. Vintage, vegan with 12% alcohol and 8 g/l dosage that preserves a distinctive stone fruits character with mild acidity, while retaining a pleasing soft texture on the palate. Brut.

Such a well-rounded and complete wine. Inviting tarte tatin nose with fresh bramley apples, wild truffles and liquorice spice on the palate. – IWSC
