Zingy and fresh with citrus notes
Unlike our other wines which start their ageing process in stainless steel tanks, Royal is a Pinot Noir Blanc de Noirs with a difference – 9 months first fermentation in 500l oak barrels, adding unique qualities to the wine and leading to greater complexity and balance in the maturing process. 500l barrels are important, as they minimize the contact between the wine and the oak, producing a more subtle and smooth sensation on the pallet. The barrels are porous, allowing a slow intake of oxygen into the wine through the wood, which helps to make the wine creamy, silky smooth, rich and warm on the palate. This beautifully balanced, limited production wine enjoys notable depth and complexity.
The rich, intense spicy, peppery, flavour of the Pinot Noir grape, prominent in our Wainscot Blanc de Noirs, undergoes a wonderful transformation yeilding cherries and pear. Traditional whole bunch press, followed by ageing in oak barrel along with our non-interventionist wine making philosophy, yields wine of great clarity, a persistent stream of beautiful tiny bubbles and exceptional length. Vintage, vegan with 12% alcohol and 8g/l dosage that ensures a pleasing soft texture on the palate. Brut.

A delicious winter wine. Pair with dates, Royal is especially at home with game, venison or pheasant served with roast leeks and wild mushrooms. Perhaps beef wellington or a hearty stew. Finish poached pears for simplicity or with a mincemeat tart– a wine that is equally at home with rich or delicate flavours.
